We found this recipe while hunger surfing Instagram. It was so simple and perfect that the author, theglowingfridge, was able to post the entire recipe in the comments–now that’s our kind of weekday breakfast recipe! Although we don’t actively promote a vegan lifestyle, we love the philosophy and approach of the author, a health and nutrition writer and creator of The Glowing Fridge. Besides, we can always appreciate a full-flavored, plant-based dish–especially one that includes some of our favorite aphrodisiac ingredients. So get on the band wagon and make some Nice Cream for breakfast or any time for a vegan pick-me-up anyone can appreciate.

- 1 mango peeled and pitted
- 2 frozen (very) ripe bananas
- splash coconut milk
- blueberries for garnish
Add the mango, bananas and coconut milk to a blender and blend on medium-high until smooth. (Add up to a Tbsp of additional coconut milk if needed.)
Divide Nice Cream into two bowls and top with a garnish of blueberries (or your favorite berry). Serve immediately.
