Spicy Peanut Vegan Sandwich Wrap

Prime Roots invited me to try several of their products, including this cracked pepper “turkey.” It’s made from koji, a type of mold used in making miso, that gives the slices a reasonably meaty texture and a deep, savory note. The cracked pepper seasoning gives it a bump of flavor that plays well with creamy peanut sauce and the crunch of the veggies.
Note: If you’ve got a mold or mushroom allergy, you’ll want to skip this one since koji is a fungus, but for everyone else, it’s an impressive alternative to processed vegan deli slices.
I tried several of the brand’s products, including a really interesting meatless salami. They by no means replicate meat slices but they give a satisfying deli slice flavor to sandwiches and wraps. Spicy Peanut Deli Wrap
Ingredients
- 1 large flour tortilla
- 2 tbsp Asian-style peanut sauce
- 3 slices Prime Roots Cracked Pepper Turkey-Inspired Clean Plant Protein
- 4 slices cucumber
- 4 slices tomatoes
- ¼ cup shredded carrots
- 1 scallion green top only, thinly sliced
- 2-3 fresh mint leaves shredded
- A few slices of red onion
- 2 –4 slices of fresh jalapeño optional, for spice
Instructions
- Lay the tortilla flat on a clean surface. Make one cut from the outside of the tortilla in toward the center
- Spread a thin, even layer of peanut sauce over the entire tortilla.
- Divide & layer the quadrants: Think of the tortilla as having 4 sections. Starting from the cut, fold each quadrant onto the next clockwise, forming a layered triangle pocket.
- For a crispier finish, press the folded wrap on a skillet for 1–2 minutes per side until golden. (Optional)
- Slice in half and enjoy immediately!
