A fresh, spicy vegan wrap made with vegan deli slices, spicy Asian peanut sauce, fresh herbs and veggies for a light, energizing meal. Make it as an on-the-go snack, or pair it with your favorite soup or salad.

Ingredients

  • 1 large flour tortilla
  • 2 tbsp Asian-style peanut sauce
  • 3 slices Prime Roots Cracked Pepper Turkey-Inspired Clean Plant Protein
  • 4 slices cucumber
  • 4 slices tomatoes
  • ¼ cup shredded carrots
  • 1 scallion green top only, thinly sliced
  • 2-3 fresh mint leaves shredded
  • A few slices of red onion
  • 2-4 slices of fresh jalapeño optional, for spice

Instructions

  • Lay the tortilla flat on a clean surface. Make one cut from the outside of the tortilla in toward the center
  • Spread a thin, even layer of peanut sauce over the entire tortilla.
  • Divide & layer the quadrants: Think of the tortilla as having 4 sections. Starting from the cut, fold each quadrant onto the next clockwise, forming a layered triangle pocket.
  • For a crispier finish, press the folded wrap on a skillet for 1–2 minutes per side until golden. (Optional)
  • Slice in half and enjoy immediately!

Notes

You can serve this sandwich cold or toast it in a skillet for 1-2 minutes per side to give the tortilla a crunchy texture.
