Passion Fruit & Quinoa Greek Yogurt Parfait
This simple parfait layers Greek yogurt with sweetened quinoa and fresh fruit.
- 1 tsp honey
- 1/2 cup cooked quinoa
- 2 passion fruits halved
- 1/2 cup raspberries
- 2/3 cup Greek yogurt full-fat recommended
Combine the quinoa and honey. Set aside.
Layer half the raspberries in each of two parfait cups, reserving two berries for garnish. (Old Fashioned glasses also work.)
Scoop the flesh from one half a passion fruit and top raspberries. Repeat with the second cup.
Divide quinoa between the two glasses.
Divide Greek yogurt and carefully top the quinoa layer, smoothing the top slightly. Top each with the remaining passion fruit flesh and garnish with the reserved raspberries.
