Top with the sparkling wine, pouring slowly, avoiding any spillover.
Notes
You can use any sparkling wine you like, it doesn't have to be expensive. It should be something good enough to serve on its own and I recommend using a Brut-style wine (as opposed to pink Champagne). I use something in the $10-$20 range.
