  • 1 lb green beans trimmed
  • 1 lb grape tomatoes halved
  • 1 large red onion thinly sliced
  • 1/2 cup Feta cheese
  • juice from one lemon
  • 1/2 tsp salt
  • 1/4 cup olive oi


  1. Bring 2 cups of water to a boil.
  2. Add green beans and cook for five minutes.
  3. Drain the beans and quickly put in a large bowl of ice water for one minute.
  4. Drain.
  5. Mix tomatoes, onion, and feta with the green beans.
  6. Juice one lemon and add coarse salt. Let dissolve for a moment, stirring.
  7. Continue to stir as you add the olive oil in a steady stream. Mix well.
  8. Top salad with dressing and season with salt and pepper.
