Curried Tuna Salad with Golden Figs

This super simple salad combines the earthy notes of toasted curry powder with the sweetness and texture of dried golden figs. Enjoy it as a salad or the filling for a sandwich.

Ingredients

  • 2 tsp curry powder
  • 1/2 a medium sweet onion such as Vidallia, finely chopped (approx 1/2 cup)
  • 1/2 cup and 2 tbsp mayonnaise
  • 2 tsp fresh squeezed lime juice
  • 2 6 oz cans white tuna packed in water drained
  • 4 golden figs finely chopped
  • 1 tbsp raw pumpkin seeds
  • pinch salt
  • 2-3 cups mixed baby lettuces

Instructions

  • Add the curry powder to a small sauté pan and toast over medium heat for about 30 seconds, until its fragrance is released. Remove pan from heat and allow the powder to cool.
  • Combine the curry powder with sweet onion, mayonnaise and lime juice in a medium mixing bowl, mixing until thoroughly combine.
  • Add the tuna, figs and pumpkin seeds and gently fold the mixture together. Season with salt before serving over lettuce.

Notes

The tuna mixture also works well as an aphrodisiac twist on a classic tuna sandwich.
