Coconut and Avocado Popsicles – upgrade your summertime treats
Avocado popsicles will take the edge off
As we enter the heart of summer, I find myself longing for anything to make being the unavoidable indoors more tolerable. Popsicles usually do the trick. But store-bought pops generally include a laundry list of additives, not to mention carageenan and an overdose of white sugar. But making all-natural popsicles at home is surprisingly easy. And they taste better than anything you can find at the corner store, too! So this week, I’m sharing my recipe this week for avocado popsicles, a refined version of the childhood treat with restrained sweetness and a creamy texture.
Avocado is a wonder fruit. Did you know that the avocado is among the most healthy fruits in the world? (And yes, despite the fact that avocado is green, it is classified as a fruit.)
What makes avocado so special?
Also nicknamed Alligator Pears, these little leathery nutritional gems offer a complete protein, containing all 18 essential amino acids, as well as vitamins A, C, E, K, and B6. They also help you absorb the nutrients from other foods! Avocados can also reduce the signs of aging, regulate blood sugar and improve eye health, and stimulate libido. These avocado popsicles can help you beat the heat and possibly create your own.
A different sweetener
For this Avocado Popsicles recipe, I also used raw honey instead of sugar. Raw honey hasn’t been pasteurized so it still has all of its glorious natural enzymes and pollens, which help lower blood sugar, aids in digestion, and can protect you against seasonal allergies.
Lastly I ditched the dairy normally used for creamy frozen treats and used coconut milk as the base for my avocado popsicles. Coconut milk is super rich with vitamins C and E help to boost the immune system, and B vitamins that are responsible for providing energy to the cells. Coconut milk is also rich in magnesium, potassium, phosphorous and iron. It’s also packed with antioxidants. And of course, it’s delicious. Added all together, you can see why coconut milk is my choice of base for these Avocado Popsicles.

Easy summer popsicles made from natural ingredients.
- 2 ripe avocados
- 1 can full fat coconut milk
- 1/4 cup raw honey
- 2 tsp freshly squeezed lime juice
- 1 tsp vanilla extract

Put all ingredients in a blender or food processor and blend until creamy.

Pour into popsicle molds.

Freeze for 1 1/2 to 2 hours.

Enjoy!
Run popsicles under warm water to remove smoothly!
