Fish sandwiches do not need to be fried. Making a sandwich is a great use for leftover pan seared or grilled fish. At Eat Something Sexy, we like to add a few aphrodisiac ingredients to spice things up!
makes 1 sandwich
1/2 tsp tarragon, finely chopped
2 tsp mayonnaise
1 onion or herb roll
1 small, ripe heirloom tomato, thinly sliced
1 leaf lettuce, such as red leaf or baby romaine
1/4 of an avocado, thinly sliced
2 oz cooked white fish, such as flounder, snapper or striped bass at room temperature
salt & black pepper
Mix the tarragon with the mayo, stirring roughly to release the tarragon oils into the sauce.
Slice the roll in half and lightly toast. Spread both halves thinly with the mayo. Position the lettuce on the bottom half of the roll. Top with the tomato and avocado. Add the fish and sprinkle it with salt and pepper. Top with the other half of the bun and serve immediately.
We like to serve this sandwich with a side of watermelon, a potent aphrodisiac for men.
