Filling
2 8oz packages of cream cheese
1 pint of sour cream
3 large eggs
1 c sugar
1 tsp. vanilla
1/2 tsp. salt
Soften
cream cheese by holding at room temperature for 30
minutes.
Beat eggs and sugar and add cream cheese, vanilla
and salt.. Fold in sour cream. Pour mixture into a
9 spring form pan.
Bake cheesecake mixture for 30-45 minutes at 350 degrees.
Test with a knife or toothpick, which should come
out clean.
Chill cheesecake for 3 hours until cool.
Strawberry Glaze
2 quarts large, whole, fresh strawberries
1 c sugar
3 T Cornstarch
Mash fresh strawberries to measure 1 cup.
Blend sugar and cornstarch in a small saucepan. Stir
in water and strawberries. Cook, stirring constantly
until mixture thickens and boils. Boil and stir for
one minute.
Place fresh strawberries pointed-side up atop cooled
cheesecake. Finish with strawberry glaze.
Remove springform pan and serve with whip cream if
desired.
