Liz in Las Vegas offers:
Succulent Strawberry Cheesecake

The Recipe:
Graham Cracker Crust- 9” Pie
1 1/2 c Graham Cracker Crumbs
1/2 c chopped walnuts
3 T Sugar
1/3 c Margarine (melted)

Preheat oven to 350 degrees.


Mix all ingredients and press firmly into bottom and sides of 9” springform pan.


Bake at 350 for 10 minutes.


Cool while making the cheesecake mixture.

 

Filling
2 8oz packages of cream cheese
1 pint of sour cream
3 large eggs
1 c sugar
1 tsp. vanilla
1/2 tsp. salt

Soften cream cheese by holding at room temperature for 30 minutes.
Beat eggs and sugar and add cream cheese, vanilla and salt.. Fold in sour cream. Pour mixture into a 9” spring form pan.


Bake cheesecake mixture for 30-45 minutes at 350 degrees. Test with a knife or toothpick, which should come out clean.


Chill cheesecake for 3 hours until cool.


Strawberry Glaze
2 quarts large, whole, fresh strawberries
1 c sugar
3 T Cornstarch


Mash fresh strawberries to measure 1 cup.


Blend sugar and cornstarch in a small saucepan. Stir in water and strawberries. Cook, stirring constantly until mixture thickens and boils. Boil and stir for one minute.


Place fresh strawberries pointed-side up atop cooled cheesecake. Finish with strawberry glaze.
Remove springform pan and serve with whip cream if desired.
