Strawberries with Champagne Sabayon
the
recipe:
2 egg yolks
1/4 c heavy (whipping) cream
1 T sugar
1/2 c Brut champagne
1 c strawberries, rinsed and drained
In a stainless steel bowl, combine the yolks, cream,
sugar, and
champagne. Over low heat, whisk the ingredients until
they thicken
enough to coat the back of a spoon. Remove from heat
and serve either warm, tepid, or chilled depending on
your mood.
Place the strawberries in 2 wine glasses drizzle the
sabayon over the top.
